Tomato and Bocconcini Bites Recipe
Appetiser Recipe: Tomato and Bocconcini Bites
Tomato, Bocconcini and Basil, red, white and green, the colours and flavours of Italy are enjoyed in these fresh and tasty appetisers. Whether at a picnic, BBQ or just enjoying the warmer weather, this easy recipe goes great with a glass or two of Margaret River 2010 Sauvignon Blanc, a fresh fruity wine with a zesty crisp dry finish. Or you might like to try another Sauvignon Blanc from our great range.
20 cherry tomatoes, halved
20 fresh basil leaves
20 small balls bocconcini (or 10 larger balls)
salt and pepper to taste
120ml balsamic vinegar
4 tablespoons extra virgin olive oil
Using a toothpick, spear a half of a tomato, a piece of basil, a bocconcini ball and another half of a tomato. Repeat with remaining ingredients. Place on a serving dish and sprinkle with salt and pepper. Mix the vinegar and oil together in a small bowl to serve as a dipping sauce.
You can find the bite-sized bocconcini at most supermarkets, but if you can only get the large ones, cut them in half.
We picked our new fresh and fruity Margaret River 2010 Sauvignon Blanc, made with a small portion of Semillon to add character and depth of flavour. But you may choose to try and of our other Sauvignon Blanc Wines
