Appetiser Recipe: Tomato and Bocconcini Bites

Tomato, Bocconcini and Basil, red, white and green, the colours and flavours of Italy are enjoyed in these fresh and tasty appetisers. Whether at a picnic, BBQ or just enjoying the warmer weather,  this easy recipe goes great with a glass or two of Margaret River 2010 Sauvignon Blanc, a fresh fruity wine with  a zesty crisp dry finish. Ingredients:

20 cherry tomatoes, halved
20 fresh basil leaves
20 small balls bocconcini (or 10 larger balls)
salt and pepper to taste
120ml balsamic vinegar
4 tablespoons extra virgin olive oil
20 toothpicks

 

Method:

Using a toothpick, spear a half of a tomato, a piece of basil, a bocconcini ball and another half of a tomato. Repeat with remaining ingredients. Place on a serving dish and sprinkle with salt and pepper. Mix the vinegar and oil together in a small bowl to serve as a dipping sauce.

Tip:

You can find the bite-sized bocconcini at most supermarkets, but if you can only get the large ones, cut them in half.
