We are so lucky here to be able to be able to get strawberries all year around. They are at their sweetest in spring and summer, so now is the perfect time to enjoy this very easy, and very popular taste bud tantaliser! Perfect at a picnic or BBQ! And what better way to enjoy it but with a glass or two of King Valley Sparkling Rose, a fruity and rosy-pink drop. Or maybe try a clean and sweet fruity glass of Riverland NV Semillon Chardonnay. 150g (2/3 cup) caster sugar
250ml (1 cup) water
100g (3 tablespoons) strawberry jam
30g (3 tablespoons) cornflour
1kg sliced fresh strawberries
1 x 23cm pre-made or bought sweet tart shell
1. Mix together the sugar, water, jam and cornflour in a medium large saucepan. Stir until mixture boils.Cook for one minute. Remove from heat.
2. Stir in the sliced strawberries until well coated. Pour into the prepared pie shell.
3. Chill until well set. Serve topped with whipped cream.
