Lemon and Green Olive BBQ Chicken Recipe
Chicken Recipes: Lemon and Green Olive BBQ Chicken
A delicious blend of tangy Mediterranean flavours make this chicken dish perfect for the warmer weather and dining outdoors. Delicious with a glass or two of crisp and citrus flavoured dry white wine such as our Barossa Valley 2009 Riesling. This Riesling is full of ripe, zesty fruit aromas, with fresh lime flavours and tangy acidity.
½ cup pitted green olives
2 tablespoons chopped preserved lemon
2 cloves garlic
2 teaspoons sea salt flakes
¼ cup fresh oregano leaves
½ teaspoon ground turmeric
2 tablespoons olive oil
4 chicken breast fillets
Place olives, lemon, garlic, salt, oregano and turmeric into a food processor. Process until well combined, add oil and process until smooth. Rub all over chicken breasts and season with salt and pepper. Marinate for as long as time permits.
Place chicken breasts onto large sheets of foil and wrap up tightly to enclose.
Cook on a hot barbecue plate over a medium/low heat for 10 minutes on both sides or until cooked through.
To jazz up this recipe, cook 375g fresh papardelle pasta and toss with sliced cooked chicken and its juices, 50g fresh baby rocket, 100g torn fresh bocconcini and a light drizzle of olive oil.

You could also try our Hunter Valley 2009 Reserve Chardonnay, another very popular dry white with more of hint of apricots and oak. Or maybe another of our flavoursome dry white wines.
